Learning the art of Sourdough

It’s been a crazy couple of years here! Building a house is no joke! It’s also amazing how long it took. Not sure I would do it again if given a choice, but I am totally thrilled with the outcome. I am even more thrilled with my new kitchen. As my husband says, “you should be, you got exactly what you wanted”.
Lately I have been trying my hand at sourdough. Talk about a learning experience. I have read so many articles about starter, discard, and all the recipes that go with it. Every expert on the issue has a different opinion. One thing I know for certain, you have to find your own way and there’s a lot of trial and error.
I am pleased to say I have a very active starter. I named it Madoughline, after my mother; her middle name was Madeline. I read, in one of the many articles, that you should name your starter. After all it is a living thing, much like having a pet. Take care of it and love it and it will return you with it’s love and rewards. So Madoughline was born.
I made a loaf yesterday and refrigerated it overnight. In the oven it went this morning when I got out of bed. My kitchen smells so good!! Oh the joys of fresh baked bread. I cannot think of a better aroma coming out of a kitchen, can you?
